‘Surprise bread’ a French festive appetizer

You might want to try this for your menu tonight.

‘Pain surprise’ as the French call it, is traditionally brought out on festive occasions such as New Year’s Eve, a party, or even a wedding, and is an appetizer before a main meal, or part of a cold buffet.

It’s basically a layering of thin sandwiches one on top of another, each layer having a different filling, the whole tower of sandwiches is then cut from its crust (often in a circle). Layers have quite fine fillings such as finely crushed walnuts and cheese, or smoked salmon.
